High Protein Chicken Orzo

A comforting one-pot dish featuring tender chicken, bright asparagus, and creamy orzo, perfect for busy weeknights.

Ingredients

  • 1 cup orzo pasta
  • 1 pound chicken breast, diced
  • 1 cup asparagus, cut into 1-inch pieces
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (e.g., mozzarella or cheddar)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Sauté the chicken: In a large pot, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  2. Add asparagus: Incorporate the asparagus into the pot and cook for another 2-3 minutes until slightly tender.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Stir in the orzo and reduce the heat to a simmer. Cook for 8-10 minutes, or until the orzo is al dente, stirring occasionally to prevent sticking.
  5. Add cream and cheese: Once the orzo is cooked, stir in the heavy cream and shredded cheese until melted and the mixture is creamy.
  6. Garnish: Remove from heat and garnish with fresh parsley if desired.
  7. Enjoy your dish warm as a comforting meal!

Notes

Don’t overcook the orzo to retain the best texture. You can customize the cheese and add vegetables as desired.
