Turkey Vegetable Soup

A comforting and nourishing blend of ground turkey and colorful vegetables in a warm broth, perfect for any occasion.

Ingredients

  • 1 pound ground turkey
  • 4 cups chicken or vegetable broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cups spinach or kale
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Brown the ground turkey in a large pot over medium heat until fully cooked, breaking it apart as it cooks.
  2. Add the diced onion, garlic, carrots, celery, and bell pepper. Cook for about 5 to 7 minutes, or until the vegetables start to soften.
  3. Pour in the chicken or vegetable broth. Add the dried oregano, along with salt and pepper to taste. Bring to a boil.
  4. Stir in the spinach or kale and let the soup simmer for about 10 to 15 minutes, allowing the flavors to meld. Taste and adjust the seasoning if necessary.
  5. Ladle out the soup into bowls and enjoy warm!

Notes

Allow vegetables to sauté until tender for a flavorful base. For a thicker soup, reduce broth or simmer longer to evaporate some liquid.
