Vanilla Raspberry Chia Pudding

A delightful and nutritious pudding combining chia seeds and raspberries, perfect for breakfast or a snack.

Ingredients

  • 3 tablespoons chia seeds
  • 1 cup unsweetened almond milk (or any milk of choice)
  • 1 teaspoon pure vanilla extract
  • 1-2 teaspoons maple syrup or honey (optional, for sweetness)
  • ½ cup fresh or frozen raspberries
  • Fresh raspberries and mint leaves for garnish (optional)

Instructions

  1. Combine the chia seeds, almond milk, vanilla extract, and sweetener (if using) in a bowl.
  2. Chill the mixture by covering the bowl and refrigerating for at least 4 hours or overnight, stirring once after 30 minutes to prevent clumping.
  3. Prepare the raspberry layer by mashing or blending raspberries to your desired texture.
  4. Assemble in serving glasses by layering chia pudding and mashed raspberries, optionally garnishing with fresh raspberries and mint leaves. Serve chilled.

Notes

Stir occasionally during chilling for uniform texture. Adjust sweetness as preferred. Use fresh ingredients for the best flavor.
