Crockpot Beef Short Ribs

Transform tough cuts of beef into irresistibly tender morsels through slow cooking for a comforting family meal.

Ingredients

  • 3 lbs Bone-In Beef Short Ribs
  • 3 Cups Baby Carrots
  • 2 Cups Mushrooms (Sliced)
  • 2 Cups Beef Broth
  • 1 Cup Red Wine (Optional)
  • 2 Tbsp Tomato Paste
  • 3 Tbsp Unsalted Butter
  • 1 Bay Leaf
  • 8 Sprigs Fresh Thyme
  • 1 Tbsp Garlic (Minced)
  • Salt (To Taste)
  • Pepper (To Taste)

Instructions

  1. Season the short ribs generously with salt and pepper on all sides.
  2. Sear the short ribs in a large skillet over medium heat for about 20 seconds on each side until browned.
  3. Place the seared short ribs in the crockpot. Add the baby carrots, sliced mushrooms, beef broth, and, if using, red wine. Stir in the tomato paste, butter, bay leaf, thyme, and minced garlic.
  4. Cover and cook on low for 8 hours, or until the meat is tender and falls off the bone easily.
  5. Carefully remove the short ribs and vegetables from the crockpot. Discard the bay leaf and thyme sprigs. Serve the beef short ribs immediately, drizzled with the rich cooking liquid.

Notes

For best results, choose high-quality bone-in beef short ribs. Consider using balsamic vinegar if not using red wine. Let the short ribs rest for a few minutes after cooking to help juices redistribute.
