Spinach and Feta Quesadillas

A quick and easy recipe for delicious spinach and feta quesadillas, perfect for lunch or a light dinner.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 4 large tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat until shimmering.
  2. Add the chopped spinach to the skillet and sauté until wilted, about 2-3 minutes.
  3. Sprinkle salt and pepper over the sautéed spinach.
  4. Place a tortilla in the skillet, and on half of the tortilla, sprinkle half of the crumbled feta cheese and half of the sautéed spinach.
  5. Fold the tortilla in half and cook until golden brown on one side, about 2-3 minutes.
  6. Flip to cook the other side until golden and pressed gently for even cooking.
  7. Remove the cooked quesadilla and set aside; repeat with the remaining tortillas.
  8. Cut each quesadilla into wedges and serve warm.

Notes

Fresh spinach adds the best flavor and texture; frozen spinach can be used if thoroughly thawed and drained. Feel free to substitute feta with goat cheese for variation.
