Slow Cooker Chicken Burrito Bowl

A flavorful and filling meal featuring tender shredded chicken, zesty salsa, rice, and fresh toppings, perfect for busy weeknights or meal prep.

Ingredients

  • 1 lb chicken breasts
  • 1 cup salsa
  • 1 cup rice (white or brown)
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 cup cheese, shredded (cheddar or your preference)
  • 1 can black beans, drained and rinsed
  • Cilantro lime vinaigrette

Instructions

  1. Prepare Chicken and Salsa: Place the chicken breasts in the slow cooker and pour the salsa over them. Ensure the chicken is well-coated.
  2. Cook the Chicken: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
  3. Shred the Chicken: Once cooked, shred the chicken with two forks. Mix it back into the salsa so that the flavor is evenly distributed.
  4. Cook Rice: While the chicken is cooking, prepare the rice according to package instructions. Set aside when done.
  5. Assemble Your Bowls: Scoop the shredded chicken over a bed of rice in each bowl. Top with diced avocado, chopped cilantro, shredded cheese, and black beans.
  6. Add Dressing: Drizzle with cilantro lime vinaigrette just before serving for an extra burst of flavor.

Notes

Check doneness of chicken with a meat thermometer; it should reach an internal temperature of 165°F. Customize flavors with additional spices or toppings as desired.
