Ingredients
4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
2 cups baby potatoes, halved
2 cups green beans, trimmed
3 tablespoons olive oil
4 cloves garlic, minced
Salt and pepper to taste
1 teaspoon Italian seasoning (optional)
Instructions
Preheat your oven to 400°F (200°C).
Toss the halved baby potatoes with 2 tablespoons of olive oil, salt, pepper, and Italian seasoning (if using) on a large sheet pan. Spread them out in a single layer for even cooking.
Mix the grated Parmesan cheese, minced garlic, salt, and pepper in a bowl until combined.
Rub the chicken breasts with the remaining tablespoon of olive oil, then coat each breast in the Parmesan mixture, ensuring an even layer.
Push the potatoes to one side of the pan and place the Parmesan-coated chicken breasts on the other side.
Toss the trimmed green beans with a drizzle of olive oil, salt, and pepper, and add them to the pan alongside the chicken.
Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are golden and crispy.
Remove from the oven, let it cool slightly, and serve hot.
