Pumpkin Snack Board

A delightful combination of pumpkin-centric ingredients, perfect for fall gatherings and cozy evenings at home.

Ingredients

  • 1 small pumpkin (sugar pumpkin preferred)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cream cheese or Greek yogurt
  • 1 tablespoon maple syrup
  • 1 teaspoon pumpkin pie spice
  • Assorted crackers and breadsticks
  • Sliced apples and pears
  • Roasted pumpkin seeds
  • A variety of cheeses (like cheddar or goat cheese)

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the pumpkin in half, scoop out the seeds, and drizzle the olive oil over the flesh. Season with salt and pepper. Place cut side down on a baking sheet and roast for 25-30 minutes until tender.
  2. Combine cream cheese (or yogurt), maple syrup, and pumpkin pie spice in a bowl. Mix until smooth and well incorporated. Set aside.
  3. Slice the roasted pumpkin into wedges or cubes. Begin arranging your snack board: start with the pumpkin as the centerpiece, then create sections for your dips, fruits, and cheeses.
  4. Fill in the gaps with an assortment of crackers, breadsticks, and sprinkle the roasted pumpkin seeds over the board for crunch.
  5. Drizzle extra maple syrup over the pumpkin (optional) and garnish with fresh herbs like rosemary or sage for a pop of color.

Notes

Choose sugar pumpkins for the best flavor. Assemble the board just before serving to keep ingredients fresh.
