Spaghetti Carbonara

A quick and easy Italian classic featuring creamy sauce, pancetta, and Parmesan cheese, perfect for weeknight dinners.

Ingredients

  • 12 oz Spaghetti
  • 6 oz Pancetta or Bacon
  • 4 large Eggs
  • 1 cup Parmesan Cheese, grated
  • 2 cloves Garlic, minced
  • Black Pepper, freshly ground
  • Salt, for seasoning the pasta water

Instructions

  1. Boil a large pot of salted water. Add the spaghetti and cook according to package instructions until al dente. Reserve some pasta water before draining.
  2. Whisk together the eggs and half of the grated Parmesan cheese until smooth. Set aside.
  3. Cook the pancetta in a large skillet over medium heat until crispy, about 5-7 minutes. Add minced garlic in the last minute of cooking, if using.
  4. Add the drained spaghetti to the skillet with the pancetta. Toss to coat the pasta in the bacon fat.
  5. Remove the skillet from the heat. Quickly pour in the egg and cheese mixture, stirring vigorously to create a creamy sauce. If it appears too thick, add a little reserved pasta water to loosen it up.
  6. Season with freshly ground black pepper and the remaining Parmesan cheese. Serve immediately while hot.

Notes

Ensure the egg mixture is combined off the heat to prevent scrambling. Fresh ingredients greatly improve flavor and texture.
