Loaded Mashed Potato Bites

Crispy, cheesy bites made from leftover mashed potatoes, perfect for parties or as a comforting side dish.

Ingredients

  • 2 cups mashed potatoes
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/2 cup breadcrumbs (optional)
  • Salt and pepper to taste
  • Oil for frying or cooking spray for baking

Instructions

  1. Preheat the Oven (if baking): Start by preheating your oven to 400°F (200°C) for a crispy finish.
  2. Mix the Ingredients: In a large bowl, combine the mashed potatoes, cheddar cheese, crumbled bacon, chopped green onions, salt, and pepper until well-mixed.
  3. Add Breadcrumbs (optional): For a firmer texture, consider mixing in breadcrumbs.
  4. Form the Bites: Using your hands, shape the mixture into small balls or patties, roughly the size of a golf ball.
  5. Cook the Bites:
    1. Frying: Heat oil in a skillet over medium heat. Fry the bites for about 3-5 minutes on each side, or until golden brown.
    2. Baking: Place shaped bites on a greased baking sheet. Lightly spray the tops with cooking spray and bake for about 20 minutes, or until golden and heated through.
  6. Serve and Enjoy: Serve the bites warm as a delicious snack or side dish!

Notes

For a vegetarian option, omit the bacon and use sautéed mushrooms or roasted red peppers. These bites can also be frozen for easy snacking later.
