Loaded Breakfast Sweet Potatoes

A nutritious and easy dish combining sweet potatoes, eggs, and beans for a hearty breakfast.

Ingredients

  • 4 medium sweet potatoes
  • 4 large eggs
  • 1 cup black beans (canned or cooked)
  • 1 avocado, diced
  • ½ cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Optional: your favorite dressing or hot sauce

Instructions

  1. Peel and cube the sweet potatoes. Boil or steam them until tender, about 10-15 minutes.
  2. In another pot, boil the eggs until hard-boiled, which should take about 9-12 minutes. Once cooked, peel and chop.
  3. In a large bowl, combine the cooked sweet potatoes, black beans, diced avocado, and halved cherry tomatoes.
  4. Gently fold in the chopped eggs, ensuring not to mash them too much to maintain texture.
  5. Season with salt, pepper, and any desired dressing. Toss to combine.
  6. Serve the dish chilled or at room temperature, making it perfect for brunch or meal-prep.

Notes

Use eggs a few days old for easier peeling. Consider adding lime or lemon juice to the avocado to prevent browning.
