King Ranch Casserole

A classic Tex-Mex comfort dish with shredded chicken, melted cheese, and a spicy kick from salsa, perfect for busy weeknights.

Ingredients

  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 4 low carb tortillas
  • 1 cup salsa (choose your spice level)
  • 1/2 cup butter (for richness)
  • 2 cups shredded cheddar cheese (for a melty top)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the shredded chicken, salsa, garlic powder, onion powder, cumin, salt, and pepper in a large bowl.
  3. Layer 2 low carb tortillas at the bottom of a greased 9×13 inch baking dish, then add half of the chicken mixture and a portion of the cheese.
  4. Repeat the layers with another set of tortillas, the remaining chicken mixture, and additional cheese, finishing with tortillas and the remaining cheese.
  5. Butter the top with melted butter to achieve a golden, crispy finish.
  6. Bake for 30-35 minutes or until the cheese is bubbly and golden.
  7. Cool slightly before serving to allow layers to set.

Notes

You can substitute the chicken with turkey or use beans for a vegetarian option. Experiment with different cheeses for varied flavors.
