Broccoli Cheddar Soup

A comforting and creamy broccoli cheddar soup that’s quick to prepare and packed with nutrition.

Ingredients

  • 4 cups Fresh Broccoli, chopped
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 4 tablespoons Butter
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Heavy Cream
  • 2 cups Cheddar Cheese, shredded
  • Salt and Pepper, to taste
  • Optional: Red pepper flakes

Instructions

  1. Sauté the butter in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes, until softened. Stir in the minced garlic and cook for another minute, until fragrant.
  2. Add the chopped broccoli, mixing well with the sautéed onion and garlic. Cook for about 2 minutes.
  3. Pour in the chicken or vegetable broth, bringing the mixture to a gentle boil. Reduce the heat and simmer for about 10-12 minutes, or until the broccoli is tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream, and then gradually add the shredded cheddar cheese, stirring until fully melted. Season with salt and pepper to taste.
  6. Ladle the soup into bowls, garnishing with extra cheese or red pepper flakes if desired. Serve hot.

Notes

Don’t overcook the broccoli and always adjust the seasoning to your taste. For a chunkier texture, blend only half of the soup.
