Healthy Broccoli Cheddar Soup

A nutritious and creamy broccoli cheddar soup that’s quick to make and perfect for any meal.

Ingredients

  • 2 cups broccoli florets
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk (or cream for extra richness)
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: croutons for topping

Instructions

  1. Sauté the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent (about 3-5 minutes).
  2. Add the broccoli florets and cook for an additional 3-4 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 10 minutes or until the broccoli is tender.
  4. Blend the soup with an immersion blender to your desired consistency.
  5. Mix in the milk and shredded cheddar cheese, stirring until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with croutons if desired.

Notes

Use fresh cheese for better melting quality; you can also customize the recipe with additional toppings or proteins.
