A festive twist on classic stuffed peppers, filled with a hearty mixture of flavors, perfect for Halloween gatherings.

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey or beef
  • 1 cup cooked rice or quinoa
  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup corn kernels
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds and membranes. Set them upright in a baking dish.
  3. Brown the ground turkey or beef in a skillet over medium heat for about 5-7 minutes, breaking it apart until fully cooked.
  4. Combine the cooked meat, rice or quinoa, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper in a large bowl.
  5. Spoon the filling mixture into each prepared bell pepper, packing it in tightly. If using cheese, sprinkle it on top.
  6. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5-10 minutes, until the peppers are tender and the cheese is bubbly.
  7. Let cool slightly before serving. Enjoy!
