Classic Potato Pancakes

Crispy, golden potato pancakes that are easy to make and deliciously comforting.

Ingredients

  • 2 cups grated potatoes (russet or yukon gold)
  • 1 small onion, grated
  • 1 large egg
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Vegetable oil for frying

Instructions

  1. Grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel, twist the towel, and squeeze out as much moisture as possible.
  2. Combine the grated potatoes and onion in a mixing bowl. Add the egg, flour, salt, and pepper. Stir until well combined.
  3. Heat enough vegetable oil in a large skillet until shimmering but not smoking.
  4. Using a 1/4 cup measure, scoop the potato mixture and flatten it slightly in the skillet. Fry for 3 to 4 minutes on each side until golden brown and crispy.
  5. Once cooked, transfer the pancakes to a paper towel-lined plate to drain excess oil and serve immediately.

Notes

Ensure you remove as much liquid as possible from the grated potatoes for a crispier texture.
