Ground Chicken Zucchini Rice Skillet

A delicious one-pan meal featuring lean ground chicken, fresh zucchini, and fluffy rice, all cooked together in a savory broth for a comforting and hearty dish.

Ingredients

  • 1 lb ground chicken
  • 2 medium zucchinis, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional: herbs like thyme or basil for added flavor

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic. Sauté until softened, about 3-4 minutes.
  2. Add the ground chicken to the skillet. Cook until browned, breaking it apart while it cooks, which should take about 5-7 minutes.
  3. Stir in the diced zucchini and cook for 3-4 minutes, until they start to soften.
  4. Add the rice and chicken broth to the skillet. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low. Cover the skillet and let it simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
  6. Season with salt and pepper to taste. If using, stir in fresh herbs before serving warm.

Notes

Don’t overcook the zucchini to retain crunch and flavor. Check rice doneness if using brown rice. Use fresh herbs for better flavor.
