A delightful dessert that balances sweet apples and juicy pears with warm spices, perfect for any occasion.

Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups diced apples (about 2 medium apples)
  • 1 cup diced pears (about 1-2 pears)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
  2. Mix together the gluten-free flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. Cream the softened butter and brown sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, then mix in the vanilla extract until well combined.
  5. Combine the dry ingredients with the wet mixture, mixing until just combined.
  6. Fold in the diced apples and pears until evenly distributed.
  7. Transfer the batter into the prepared cake pan, smoothing the top with a spatula.
  8. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure the butter and eggs are at room temperature for better incorporation. Don’t overmix to avoid a dense cake.
