Garlic Butter Steak Bites and Potatoes

A delightful dish featuring juicy steak and crispy potatoes in rich garlic butter, perfect for family dinners or gatherings.

Ingredients

  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. Heat a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of the ghee to the pan.
  2. Add the cubed potatoes, then sprinkle the minced garlic, thyme, oregano, salt, and pepper over them. Cook for 2-3 minutes before stirring. Continue cooking for about 8-10 minutes until they are golden brown and fork-tender.
  3. Remove the potatoes from the pan and set them aside.
  4. Increase the heat to medium-high and add the remaining two tablespoons of ghee to the skillet. Once melted, add the cubed steak, seasoning with a dash of salt and pepper. Let it sear for 2 minutes without stirring.
  5. Stir the steak pieces for an additional 1-2 minutes until they are golden brown but still medium-rare. Return the potatoes to the pan and combine them with the steak. Adjust seasoning if necessary.
  6. Top with freshly chopped parsley before serving.

Notes

Use unsalted butter for a creamier taste. Fresh herbs enhance flavor significantly.
