Easy Vegan Pumpkin Pancakes

Fluffy and subtly spiced, these vegan pumpkin pancakes are the perfect autumn breakfast.

Ingredients

  • 1 cup pumpkin puree
  • 1 cup non-dairy milk (such as almond or oat)
  • 3 tablespoons brown sugar
  • 2 tablespoons melted vegan butter
  • 1 teaspoon vanilla extract
  • 1¼ cup all-purpose flour
  • 1 tablespoon baking powder
  • ¾ teaspoon cinnamon
  • ¼ teaspoon nutmeg

Instructions

  1. Mix Wet Ingredients: In a large bowl, stir together the pumpkin puree, non-dairy milk, brown sugar, melted vegan butter, and vanilla extract until well combined.
  2. Combine Dry Ingredients: In a separate bowl, mix together the flour, baking powder, cinnamon, and nutmeg.
  3. Combine Mixtures: Gradually add the dry ingredients to the wet mixture. Stir gently until the dry ingredients are just incorporated—be careful not to overmix.
  4. Heat the Pan: Preheat a non-stick pan over medium heat. For crispy edges, add a teaspoon of vegan butter to the pan.
  5. Pour the Batter: Once hot, scoop about ¼ cup of batter onto the pan for each pancake.
  6. Cook the Pancakes: Cook until you see bubbles forming around the edges and the bottom is golden brown, about 3 to 4 minutes. Flip and cook for an additional 1 to 2 minutes until golden brown on the other side.
  7. Serve and Enjoy: Remove pancakes from the pan and keep warm while you finish cooking the remaining pancakes. Serve with your favorite toppings.

Notes

Experiment with toppings and adjust flavors to suit your preference. Use fresh baking powder for best results.
