Slow Cooker Beef Short Ribs

Effortless slow-cooked beef short ribs that are tender and full of flavor, perfect for busy days.

Ingredients

  • 3-4 pounds beef short ribs (well-marbled)
  • 2 cups beef broth
  • 1 large onion, sliced
  • 4-5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • Salt and black pepper, to taste
  • 1 teaspoon smoked paprika
  • A few sprigs fresh thyme (optional)
  • 1 tablespoon olive oil (optional, for searing)

Instructions

  1. Prepare the ribs: Pat the beef short ribs dry with paper towels. Season generously with salt, black pepper, and smoked paprika.
  2. Sear the ribs (optional): Heat olive oil in a skillet over medium-high heat. Sear the ribs for 2-3 minutes per side until browned.
  3. Layer the slow cooker: Place sliced onions and minced garlic at the bottom of the slow cooker.
  4. Add the ribs: Arrange the ribs on top of the onions and garlic without overcrowding.
  5. Mix the sauce: In a bowl, combine the beef broth, tomato paste, Worcestershire sauce, and brown sugar. Pour the sauce over the ribs.
  6. Add herbs: If using, add a few sprigs of fresh thyme.
  7. Cook: Cover and cook on low for 7-8 hours or on high for 4-5 hours.
  8. Thicken the sauce: Remove the ribs and simmer the cooking liquid over medium heat until it reduces and thickens.
  9. Serve: Serve the ribs with the sauce over them, paired with sides like mashed potatoes or a salad.

Notes

Searing the ribs is optional but adds depth to the flavor. Ensure proper seasoning and avoid overcrowding the slow cooker.
