Crockpot Tortellini Soup

A cozy, creamy soup that’s perfect for busy days or chilly evenings, featuring cheese tortellini in a rich broth.

Ingredients

  • 1 package (9 oz) cheese tortellini
  • 4 cups vegetable or chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup spinach (fresh or frozen)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Combine the broth, diced tomatoes, onion, and garlic in a slow cooker. Stir well to blend the flavors.
  2. Add the cheese tortellini and spinach to the slow cooker. Gently stir until they are incorporated into the broth mixture.
  3. Cover and cook on low for 240 minutes (4 hours). This slow cooking allows the flavors to meld beautifully.
  4. Stir in the heavy cream, allowing it to combine with the other ingredients for a velvety texture.
  5. Taste and season with salt and pepper as desired, adjusting to your flavor preference.
  6. Serve hot, topped with freshly grated Parmesan cheese.

Notes

Avoid overcooking the tortellini, and add the cream towards the end to maintain its richness. For a healthier option, substitute with whole-wheat or gluten-free tortellini.
