Crock Pot Cilantro Lime Chicken

A delicious and easy Crock Pot recipe featuring tender chicken infused with fresh cilantro and lime flavors, perfect for busy weeknights or meal prep.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cilantro, chopped
  • 1/4 cup lime juice, freshly squeezed
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup chicken broth

Instructions

  1. Prep the chicken: Place the chicken breasts in the bottom of the crockpot. They should fit snugly but not be crammed together.
  2. Mix the sauce: In a medium bowl, combine the chopped cilantro, lime juice, lime zest, minced garlic, cumin, salt, and pepper. Stir until well mixed.
  3. Add to chicken: Pour the cilantro-lime mixture over the chicken in the crockpot, ensuring it’s evenly coated.
  4. Add broth: Pour the chicken broth around the sides; this will keep the chicken juicy as it cooks.
  5. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
  6. Shred the chicken: Once cooked, use two forks to shred the chicken, then stir it back into the sauce to combine thoroughly.
  7. Serve: Dish up the chicken with rice, tortillas, or fresh vegetables for a delightful meal.

Notes

For the best flavor, use fresh cilantro and lime. Avoid overcooking to retain juiciness.
