Ingredients
800 g Chicken Breast (cut into halves)
1.5 tsp Cajun Seasoning Mix
2 tsp Olive Oil
25 g Grass Fed Butter for Cooking
1 tsp Salt
1 tsp Black Pepper
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Oregano
1 tsp Thyme
1 tsp Paprika
1 tsp Chilli Powder
1 Medium Red Onion (chopped)
4-5 Garlic Cloves (chopped)
15 g Grass Fed Butter
250 ml Milk
150 g Light Cream Cheese
40 g Parmesan
1/2 Cajun Seasoning Mix (for rice)
Fresh Parsley (for garnish)
Instructions
Marinate the chicken: In a bowl, combine the chicken breasts with 1.5 tsp Cajun seasoning mix and 2 tsp olive oil. Mix well to ensure every piece is coated. Marinate in the refrigerator overnight for added flavor.
Cook the chicken: Heat a pan over medium-high heat. Add 25 g of grass-fed butter and melt it. Once hot, add the marinated chicken and cook for about 6-7 minutes on each side or until it develops a crispy, golden crust. Remove from the pan and let it rest.
Sauté vegetables: In the same pan, add 15 g of grass-fed butter. Once melted, add the chopped red onion and garlic. Sauté until fragrant and the onions are translucent.
Prepare the rice: To the pan, add the remaining Cajun seasoning mix and day-old rice. Stir until the rice is well coated with the flavors.
Make the creamy sauce: Lower the heat and slowly whisk in 250 ml of milk. Once warmed, add 150 g of light cream cheese and 40 g of Parmesan, stirring until the sauce is smooth and creamy.
Combine and serve: Layer the Cajun rice on a plate. Top with the sliced chicken and drizzle the creamy sauce over the top. Garnish with fresh parsley.
Notes
Marinate chicken longer for enhanced flavor; use day-old rice to maintain texture.
