Creamy Butternut Squash Gnocchi with Sausage, Thyme, and Sage

A comforting dish combining roasted butternut squash, savory sausage, and tender gnocchi, ideal for chilly evenings.

Ingredients

  • 1 package gnocchi
  • 1 medium butternut squash, peeled and cubed
  • 1 lb sausage (Italian or breakfast)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh sage, chopped
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Parmesan cheese, for serving

Instructions

  1. Brown the sausage: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
  2. Sauté onion and garlic: In the same skillet, add the diced onion and minced garlic. Sauté until the onion is soft and translucent, approximately 3-4 minutes.
  3. Cook butternut squash: Add the cubed butternut squash to the skillet. Season with salt and pepper, and cook until it’s tender, around 8-10 minutes. Stir occasionally to prevent sticking.
  4. Combine ingredients: Stir in the cooked sausage, fresh thyme, sage, and any additional salt and pepper. Mix well.
  5. Add gnocchi and cream: Pour in the heavy cream and add the gnocchi. Cook, stirring occasionally, until the gnocchi are heated through, about 3-4 minutes.
  6. Serve: Dish out the creamy butternut squash gnocchi warm, topped with freshly grated Parmesan cheese.

Notes

For a leaner option, use turkey sausage or omit it entirely for a vegetarian version. Consider substituting half of the heavy cream with vegetable broth for a lighter dish.
