Creamy Beef & Cheese Burritos

A comforting family-friendly meal featuring bold flavors and cheesy goodness, perfect for busy weeknights or meal prepping.

Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 can cream of mushroom soup
  • 1 cup diced tomatoes (optional)
  • 1 package large burrito tortillas
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Chopped cilantro or green onions (optional)

Instructions

  1. Brown the Beef: In a large skillet over medium heat, brown the ground beef until fully cooked. Make sure to break it up with a spoon for even cooking. Drain any excess fat.
  2. Prepare the Filling: Stir in the cream of mushroom soup, garlic powder, onion powder, salt, and pepper. Mix well to combine until the mixture is creamy and smooth.
  3. Add Tomatoes (Optional): If desired, add the diced tomatoes to the skillet. This step enhances the flavor and texture of the filling. Stir to incorporate.
  4. Fill the Tortillas: Lay out the burrito tortillas on a flat surface. Spoon the beef mixture evenly onto each tortilla, topping with shredded cheese.
  5. Roll the Burritos: Roll each tortilla tightly, tucking in the sides as you go to secure the filling inside.
  6. Arrange and Bake: Place the rolled burritos seam-side down in a baking dish. For extra cheesiness, sprinkle additional cheese on top. Bake in a preheated oven at 350°F (175°C) for about 10-15 minutes, or until heated through and the cheese is melted.
  7. Garnish and Serve: Garnish with chopped cilantro or green onions if desired. Serve warm and enjoy!

Notes

Avoid soggy tortillas by warming them slightly before filling. Don’t overstuff to maintain the roll’s integrity.
