Ingredients
4 bell peppers (any color; red, yellow, or green)
2 cups shredded chicken breast (leftover or rotisserie chicken)
1 cup cream cheese (softened)
2 cups cheddar cheese (shredded, plus an additional 1 cup for topping)
1/4 cup scallions (chopped)
1/2 cup salsa verde
Instructions
Preheat your oven to 375°F (190°C) so it’s hot and ready for baking.
Halve the bell peppers lengthwise and remove the seeds and membranes. Arrange them cut-side up in a baking dish.
In a large bowl, combine the shredded chicken, softened cream cheese, 1 cup of cheddar cheese, chopped scallions, and salsa verde. Stir until well combined.
Spoon the chicken mixture generously into each halved bell pepper, pressing down lightly to pack it in.
Sprinkle the additional cup of shredded cheddar cheese evenly over the stuffed peppers.
Place the filled peppers in the preheated oven and bake for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden.
Notes
Select firm peppers for the best texture and avoid overfilling them to let the cheese melt over the top.
