Grilled Chicken Skewers

Juicy marinated chicken skewers with colorful vegetables, perfect for summer barbecues or weeknight dinners.

Ingredients

  • 1 pound chicken breast, cut into cubes
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Bell peppers, onions, and zucchini (or your favorite vegetables)

Instructions

  1. Prepare the Marinade: In a bowl, combine the olive oil, soy sauce, honey, minced garlic, minced ginger, salt, and pepper. Whisk until well combined.
  2. Marinate the Chicken: Add the cubed chicken to the marinade, ensuring all pieces are covered. Cover the bowl and let it marinate for at least 30 minutes in the refrigerator to enhance flavor.
  3. Preheat Your Grill: While the chicken marinates, preheat your grill to medium-high heat.
  4. Assemble the Skewers: Thread the marinated chicken and selected vegetables onto skewers, alternating ingredients for the best flavor and presentation.
  5. Grill the Skewers: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through.
  6. Serve and Enjoy: Once done, remove the skewers from the grill and let them rest for a couple of minutes. Serve warm with your favorite dipping sauce.

Notes

Feel free to mix and match vegetables based on your preference. For a spicier kick, add some chili peppers to the skewers.
