A comforting bowl of Chicken Rice Soup, perfect for chilly days or nourishing family meals with tender chicken, wholesome veggies, and hearty brown rice.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup brown rice
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp thyme
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Sauté the aromatics: In a large pot, heat a bit of oil over medium heat. Add chopped onions and minced garlic. Sauté until translucent, about 3-4 minutes.
  2. Add the vegetables: Stir in the diced carrots and celery, cooking for an additional 5 minutes until they begin to soften.
  3. Incorporate chicken and rice: Mix in the shredded chicken and brown rice, ensuring that everything is well combined.
  4. Pour in broth and season: Add the chicken broth, thyme, salt, and pepper. Stir to combine, and bring the mixture to a boil.
  5. Simmer to perfection: Reduce the heat to low and let the soup simmer for 20-30 minutes, or until the rice is tender and cooked through.
  6. Serve and garnish: Ladle the soup into bowls and garnish with fresh parsley if desired. Enjoy while hot!

Notes

Using rotisserie chicken can save time while still delivering a flavorful result. Check the rice during cooking for desired texture.
