Breakfast Sweet Potatoes

A delightful blend of roasted sweet potatoes, crispy bacon, and eggs, this hearty breakfast is both nutritious and satisfying.

Ingredients

  • 2 medium sweet potatoes
  • 4 strips of bacon
  • 4 eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them with a fork a few times. Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a knife.
  3. Cook the bacon in a skillet over medium heat until crispy. Remove and crumble it into small pieces once it cools.
  4. Fry the eggs to your liking in the same skillet with bacon drippings.
  5. Cut the sweet potatoes in half lengthwise and scoop out a bit of the flesh from the center to create a small well.
  6. Fill each half with crumbled bacon, layer the eggs on top, and sprinkle cheese generously over everything.
  7. Return the stuffed sweet potatoes to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly.
  8. Season with salt and pepper to taste, garnish with green onions if desired, and serve hot.

Notes

Use russet potatoes for a different texture. Substitute bacon with turkey bacon or a plant-based option for a lighter version. Experiment with different types of cheese for varied flavors.
