Italian Wedding Soup

A comforting Italian soup packed with meatballs, tender pasta, and vibrant greens, perfect for any occasion.

Ingredients

  • 2 cups chicken broth
  • 1 cup water
  • 1 teaspoon garlic, minced
  • 1 teaspoon onion, diced
  • 1 cup cooked meatballs (store-bought or homemade)
  • 1 cup chopped spinach (fresh or frozen)
  • 1/2 cup small pasta (like acini di pepe or orzo)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Combine the chicken broth, water, minced garlic, and diced onion in a pot. Bring to a gentle simmer.
  2. Add the cooked meatballs to the pot. Allow them to heat through in the broth for about 5 minutes.
  3. Let the soup simmer for about 15-20 minutes, allowing the flavors to meld together.
  4. Stir in the chopped spinach and small pasta. Cook until the pasta is tender, about 5 minutes.
  5. Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese.

Notes

For a lighter option, substitute meatballs with cooked chicken or turkey. For a gluten-free version, use gluten-free pasta or omit it entirely. Watch the pasta to ensure it is cooked al dente.
