Best Cabbage Soup

A warm, hearty cabbage soup that is simple to prepare and packed with flavor, perfect for any day of the week.

Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 6 cups of vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Sauté the vegetables: In a large pot, heat a splash of oil over medium heat. Sauté the onion, carrots, and celery until they are softened, about 5-7 minutes.
  2. Add the garlic: Stir in the minced garlic and cook for another minute until fragrant, being careful not to let it burn.
  3. Combine the main ingredients: Add the chopped cabbage, vegetable broth, diced tomatoes, bay leaves, thyme, salt, and pepper to the pot. Stir well to combine.
  4. Bring to a boil: Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer.
  5. Simmer: Allow the soup to simmer for about 30 minutes or until the cabbage is tender. Taste and adjust seasoning if needed.
  6. Serve: Before serving, remove the bay leaves. Enjoy your soup warm!
