A comforting and nourishing soup featuring turmeric, tender chicken, and aromatic spices, perfect for cozy dinners and meal prep.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 tablespoon turmeric powder
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Sauté aromatics: In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion and minced garlic. Sauté until softened, about 3-4 minutes.
  2. Add vegetables and spices: Stir in the turmeric powder, sliced carrots, and chopped celery. Cook for an additional 3-5 minutes until the vegetables begin to soften.
  3. Combine broth: Pour in the chicken broth and bring the mixture to a boil.
  4. Add chicken and coconut milk: Once boiling, reduce the heat to a simmer. Add the shredded chicken and coconut milk, stirring to combine.
  5. Simmer: Allow the soup to simmer for about 15-20 minutes. Check the vegetables for tenderness.
  6. Season: Taste the soup and season with salt and pepper as needed.
  7. Serve hot: Ladle the soup into bowls and garnish with fresh herbs. Enjoy!

Notes

Use leftover cooked chicken or rotisserie chicken for convenience. Fresh turmeric can also be used for the best flavor.
