ABC Mini Muffins

Delightful mini muffins made with applesauce, bananas, and carrots, perfect for breakfast or a healthy snack.

Ingredients

  • 1 cup applesauce
  • 1 ripe banana, mashed
  • 1/2 cup grated carrots
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a mini muffin tin by greasing it lightly or using mini muffin liners.
  2. Combine the applesauce, mashed banana, grated carrots, vegetable oil, eggs, and vanilla extract in a large mixing bowl. Mix until smooth.
  3. Whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon in a separate bowl until well blended.
  4. Add the dry mixture to the wet ingredients gradually. Stir gently until just combined, making sure not to overmix.
  5. Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
  6. Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool slightly in the tin before transferring them to a wire rack.

Notes

Use ripe bananas for the best sweetness. Muffins store well in an airtight container for up to 5 days in the fridge.
