35 Dinners To Make When It’s Cold Out

A hearty and comforting recipe perfect for cozy nights with family and friends.

Ingredients

  • 1 pound ground beef (or turkey for a leaner option)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 4 cups beef or vegetable broth
  • 1 can (15 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup diced potatoes or sweet potatoes (optional)
  • 1 cup frozen peas or corn (optional)

Instructions

  1. Sauté the Aromatics: In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Cook for about 5 minutes until the vegetables soften and the onion becomes translucent.
  2. Brown the Meat: Add the ground beef (or turkey) to the pot. Cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat if necessary.
  3. Add Vegetables: Stir in the bell pepper and any optional vegetables like potatoes. Cook for an additional 3-4 minutes.
  4. Pour in the Broth: Add the broth and diced tomatoes (with their juice) to the pot. Stir well to combine all the ingredients.
  5. Season & Simmer: Add oregano, thyme, salt, and pepper. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, allowing the flavors to meld together.
  6. Serve & Enjoy: Taste the soup and adjust seasoning if needed. Ladle the steaming soup into bowls and enjoy warm.

Notes

Ground beef can be replaced with ground chicken, sausage, or a plant-based alternative. Feel free to substitute or add your favorite vegetables based on what’s in your fridge.
