Creamy Mushroom Risotto

A comforting and satisfying dish that combines creamy arborio rice with earthy mushrooms and aromatic herbs, perfect for impressing guests.

Ingredients

  • 1 cup arborio rice
  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces cremini or button mushrooms, sliced
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper, to taste

Instructions

  1. Prep the broth: In a small saucepan, heat the broth over medium heat. Keep it warm but not boiling during cooking.
  2. Cook the aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Sauté the mushrooms: Add the sliced mushrooms to the pot and cook for about 5-7 minutes, or until they release their moisture and soften. Season with a pinch of salt.
  4. Add the rice: Stir in the arborio rice, ensuring each grain is well-coated with oil, about 2 minutes. You will notice a slight transparency around the edges of the rice.
  5. Deglaze with wine: Pour in the white wine and let it simmer, stirring frequently, until the liquid is mostly absorbed.
  6. Add broth gradually: Begin adding the warm broth, one ladleful at a time, stirring continuously. Wait until most of the liquid has absorbed before adding the next ladle. Continue this process for about 18-20 minutes, or until the rice is al dente and creamy.
  7. Finish with cheese and butter: Remove from heat and stir in the Parmesan cheese and butter. Adjust seasoning with more salt and pepper as needed.
  8. Serve: Ladle the risotto into bowls and enjoy immediately while hot and creamy.

Notes

Stir constantly while cooking for creaminess and monitor the heat to prevent burning. Adjust seasoning as needed.
